These no bake lemon and coconut squares are an easy, oven-free treat with a firm, chewy texture and a fresh, zesty flavour. Topped with a simple lemon icing for a bright finish, they are quick to prepare and make a great summer treat. The hardest part is just waiting for them to set before slicing and serving.

- 4 tablespoons

- Making the base:
- Line a tin with parchment paper and set aside
- Fit the Creaming Beater
- Add the ingredients into the appliance bowl, fit the splashguard
- Mix until combined - 1 minute, speed Min
- Then add the next ingredients

- Transfer the mixture into the prepared tin and level with a spatula
- Chill in the fridge until set - 30 minutes
- Making the icing:
- Clean the appliance bowl and fit the K-Beater
- Add the ingredients into the appliance bowl
- Then add a few drops of food colouring and fit the splashguard
- Mix until the icing is thick and pastel yellow - 5 minutes, speed 1
- Transfer the icing on top of the chilled biscuit base and level with a spatula
- Chill in the fridge until set - 2 hours
- Cut into squares
- Garnish, if desired
- Serve
