Layered pumpkin in a creamy cheesy sauce, flavoured with herbs and garlic. This makes a great side dish in a big family dinner. We recommended using Crown Prince, Uchiki Kuri or Kabocha pumpkin varieties, but most cooking pumpkins or squash will work. If scaling the recipe up for a large party divide it between two baking dishes to keep the cooking time down and ensure all the pumpkin softens.

  1. Fit the Stir Tool
  2. Add the ingredients into the appliance bowl
  3. Cook until thickened - 5 minutes, 85ºC, speed Stir 2
  4. Strain the mixture into a jug and discard the herbs and garlic
  5. Clean the appliance bowl and fit the Stir Tool
  6. Add the ingredients into the appliance bowl, fit the splashguard
  7. Heat until melted - 1 minute, 120ºC, speed Off
  8. Then add the next ingredients
  9. Cook until golden - 15 minutes, 110ºC, speed Stir 3
  10. Preheat the oven - 180ºC
  11. Add a layer of pumpkin to the bottom of the baking dish
  12. Then add a layer of onions and pour some of the infused cream on top to cover the pumpkins
  13. Then add a layer of grated cheese
  14. Repeat the steps until the baking dish is full
  15. Finish with a layer of grated cheese on top
  16. Cover with foil and bake until the pumpkin softened - 45 minutes, 180ºC
  17. Remove the baking dish from the oven and remove the foil
  18. Increase the oven temperature - 200°C
  19. Bake until golden brown - 20 minutes, 200°C
  20. Remove from the oven and let cool - 5 minutes
  21. Serve
