Red pepper and goats cheese is a delicious flavour combination, the red pepper soup is served with a rich goats cheese and milk mixture swirled decadently through it. Use ricotta instead of goats cheese if you prefer, you could also try making this soup with jarred roasted red peppers.

  1. Fit thick slicing disc (5) to direct prep attachment
  2. Fit direct prep attachment to kCook Multi
  3. Fit max blade to kCook bowl
  4. Add extra virgin olive oil to the kCook bowl

  6. Attach lid to kCook bowl
  7. Heat with filler cap removed - 120°C, speed 3
  8. Turn direct prep attachment to position 1
  9. Slice onion and red bell pepper into the kCook bowl with direct prep attachment
  10. Turn direct prep attachment to position 2
  11. Add garlic clove and vine tomatoes to the kCook bowl
  12. Cook with filler cap removed - 5 min, 120°C, speed 2
  13. Then add vegetable stock to the kCook bowl
  14. Season to taste
  15. Add fresh basil leaves to the kCook bowl
  16. Cook with filler cap fitted - 20 min, 98°C, speed 2
  17. Blend with filler cap fitted - 2 min, speed 12
  18. Add soft goat cheese and goat milk to a clean medium bowl
  19. Mix
  20. Drizzle soup with dressing
  21. Garnish with cucumber
  22. Serve
