Chewy and rich chocolate caramels. Divide them up and wrap in greaseproof paper for a sweet treat gift. You can store these chocolates in the fridge and keep them for a maximum of 2 weeks.

- Line a clean square pan with parchment paper
- Attach the Creaming Beater
- Add thickened cream to the Cooking Chef XL Bowl
- Lift the Cooking Chef head and fit the heat shield
- Cook with splashguard fitted until thickened - 1 min, 105°C, Stir 1
- Transfer cream to jug
- Cover with plastic wrap then set aside
- Clean Cooking Chef bowl
- Attach the Creaming Beater
- Add caster sugar and glucose syrup to the Cooking Chef XL Bowl
- Cook with splashguard fitted until sugar has dissolved - 25 min, 180°C, Stir 2
- Transfer cream to Cooking Chef XL Bowl gradually
- Cook with splashguard fitted until thickened - 5 min, 115°C, Stir 1
- Then add dark chocolate and butter to the Cooking Chef XL Bowl
- Mix with splashguard fitted until smooth - 2 min, Stir 1
- Pour chocolate mixture into square pan and let cool
- Chill overnight in fridge until set
- Remove the chocolate caramel from the tin
- Cut into pieces
- Serve
