Step preview

  1. Add plain flour and bicarbonate of soda to a clean medium bowl
  2. Mix briefly until combined
  3. Attach K Beater
  4. Add unsalted butter, brown sugar, salt, peanut butter, caster sugar, egg and vanilla extract to the Kenwood Bowl
  5. Mix until combined - approx 30 sec, Speed 3
  6. Transfer flour mixture to Kenwood Bowl
  7. Mix until just combined - approx 20 sec, Speed 3
  8. Remove the dough from the bowl
  9. Divide into halves
  10. Wrap with plastic wrap
  11. Chill in fridge - 2 hr
  12. Pre-heat oven - 160°C
  13. Line 2 clean baking sheets with parchment paper
  14. Remove the chilled dough from the fridge
  15. Roll into balls
  16. Gently flatten the dough balls
  17. Transfer dough balls to 2 baking sheets
  18. Bake until golden brown - 13 min, 160°C
  19. Transfer onto cooling rack and let cool
  20. Serve
