A delicious and nutritious soup, garnished with sumac oil and mint leaves. Sumac is a tangy lemony spice used in middle eastern and Mediterranean cooking, used in salads or to season meat or as a garnish for hummus. With this recipe simply adjust the amount of chilli flakes to your liking.

- 1.5 kg

- Fit thick slicing disc (5) to direct prep attachment
- Fit direct prep attachment to kCook Multi
- Add olive oil and ground sumac to a clean small bowl
- Mix well until combined then set aside
- Fit max blade to kCook bowl
- Add olive oil to the kCook bowl
- Fit kCook bowl to kCook Multi
- Attach lid to kCook bowl with filler cap fitted
- Heat with filler cap fitted - 140°C, speed 3
- Turn direct prep attachment to position 1
- Slice onion and carrot into the kCook bowl with direct prep attachment
- Turn direct prep attachment to position 2
- Add garlic clove, chili flakes, ground cumin and paprika to the kCook bowl
- Cook with filler cap removed - 5 min, 120°C, speed 2
- Then add vegetable stock, red lentils and tomato paste to the kCook bowl
- Cook with filler cap fitted - 20 min, 98°C, speed 3
- Blend with filler cap fitted - 2 min, speed 12
- Season to taste
- Garnish with mint leaves
- Garnish soup with oil mixture
