These are traditional Easter biscuits with currants and mixed spice, we have also included some candied peel for a zesty citrus variation - you could leave this out or add some orange or lemon zest instead if you prefer. To finish, these biscuits are glazed with egg white and sprinkled with sugar during baking.

Step preview

  1. Pre-heat oven - 160°C
  2. Line a clean baking tray with parchment paper
  3. Attach K Beater
  4. Add unsalted butter and caster sugar to the Kenwood Bowl
  5. Mix then scrape bowl - 1 min, Speed 3
  6. Then add egg yolk to the Kenwood Bowl
  7. Mix with splashguard fitted - 20 sec, Speed 3
  8. Then add plain flour, mixed spice, salt, currants, candied citrus peel and milk to the Kenwood Bowl
  9. Mix with splashguard fitted until dough forms - 40 sec, Speed 1
  10. Transfer dough to lightly floured surface
  11. Roll out into a circle
  12. Cut into rounds
  13. Transfer biscuits to baking tray
  14. Bake - 10 min, 160°C
  15. Remove from oven
  16. Brush with egg white
  17. Sprinkle with caster sugar
  18. Bake until light golden - 5 min, 160°C
  19. Remove from oven
  20. Turn out onto cooling rack and let cool
  21. Serve
