A quick zucchini brownie made using the Food processor attachment, which uses the knife blade to puree the zucchini into the batter. Great for using up a leftover zucchini.

Step preview
- Pre-heat oven - 170°C
- Grease and line a clean square pan with parchment paper
- Assemble the Food Processor attachment to the machine
- Fit the knife blade to the machine
- Add zucchini, unsalted butter, caster sugar, egg and vanilla extract to the Food processor attachment
- Attach the lid and ensure it is locked into place
- Pulse until smooth
- Add plain flour, cocoa powder, baking powder, coffee powder and salt to the Food processor attachment
- Mix until just combined
- Remove the attachment from the machine
- Remove the knife blade
- Add dark chocolate chips to the Food processor attachment
- Stir until just combined
- Transfer batter to square pan
- Bake - 25 min, 170°C
- Remove from oven and let cool
- Add milk to a clean saucepan
- Heat until hot - medium-low heat
- Transfer content of saucepan to medium bowl
- Add dark chocolate chips to the medium bowl
- Stir until melted
- Add icing sugar and honey to the medium bowl
- Stir until combined
- Chill in fridge until set
- Remove the chilled chocolate mixture from the fridge
- Spread cake with chocolate
- Cut into 12 equal pieces
- Serve
