A classic Korean combination of kimchi and pork fills these dumplings, which are perfect for steaming, adding to soups, or freezing so you can satisfy your dumpling craving whenever it strikes. Flecked with chives, ginger and garlic, the kimchi adds a savoury funkiness, while sesame oil gives a distinct nutty flavour. You can make these dumplings vegetarian by replacing the pork with finely diced mushrooms and using a vegetarian kimchi. Serve with soy sauce for dipping.
