The perfect accompaniment for cold meats and cheese, this piccalilli is a great way to use up odds and ends left in your fridge. Once made, leave your jar in a cool, dark place or keep refrigerated for at least 6 weeks before opening. This recipe makes enough for 1 x 1 l jar. Make sure your jar is sterilised by running it through a dishwasher or rinsing it with boiling water and drying it at a very low temperature in the oven.

Step preview

  1. Add cauliflower, shallot, green beans and zucchini to a clean colander
  2. Place in the sink
  3. Sprinkle with sea salt
  4. Let rest - 3 hr
  5. Attach the Stir Tool
  6. Add malt vinegar, sugar, sea salt, ground turmeric, mustard seeds, coriander seeds, cumin seeds and mustard powder to the Cooking Chef XL Bowl
  7. Lift the Cooking Chef head and fit the heat shield
  8. Cook with splashguard fitted until simmering - 5 min, 110°C, Stir 2
  9. Rinse the vegetables in the colander thoroughly
  10. Transfer content of colander to Cooking Chef XL Bowl
  11. Cook with splashguard fitted until softened - 6 min, 110°C, Stir 2
  12. Add cornflour and water to a clean small bowl
  13. Stir until combined
  14. Transfer content of small bowl to Cooking Chef XL Bowl
  15. Add gherkins to the Cooking Chef XL Bowl
  16. Cook with splashguard fitted until thickened - 9 min, 105°C, Stir 2
  17. Transfer content of Cooking Chef XL Bowl to jar
  18. Leave until cool - 1 hr
  19. Serve
