Toshikoshi Soba is traditionally eaten on New Year’s Eve, the noodles symbolising the crossing from one year to the next, and cutting the noodles represents letting go of the past year. Toshikoshi soba is very simple, healthy, and quick to make. This recipe substitutes the traditional dried fish-infused dashi for a vegetarian version, so the dish can be enjoyed by all. Feel free to use fish-based dashi if you prefer.

  10. Ladle broth into large serving bowl
  11. Top with spring onion and dried wakame seaweed
  12. Serve
