‘Nduja is a spicy, spreadable sausage from Southern Italy that’s packed with flavour. Here it’s used to add spice and complexity to the classic combination of mussels and white wine, while keeping things quick and simple. Ensure you clean and debeard your shellfish thoroughly before cooking and discard any mussels that are already open. Serve with plenty of crusty bread for mopping up any leftover juices.

  5. Then add onion and garlic clove to the Cooking Chef XL Bowl
  6. Cook with splashguard fitted until translucent - 4 min, 120°C, Stir 2
  7. Then add 'nduja to the Cooking Chef XL Bowl
  8. Use a wooden spoon or spatula to break up into pieces
  9. Cook with splashguard fitted - 2 min, 110°C, Stir 1
  10. Then add white wine to the Cooking Chef XL Bowl
  11. Cook with splashguard fitted until boiling - 1 min, 110°C, Stir 2
  12. Then add mussels to the Cooking Chef XL Bowl
  13. Cook with splashguard fitted until cooked through - 4 min, 110°C, Speed OFF
  14. Remove the splashguard
  15. Add fresh parsley to the Cooking Chef XL Bowl
  16. Mix until combined
  17. Discard any mussels that have not opened
  18. Serve
