Zimtsterne, or German cinnamon stars, are a light, gluten free biscuit and usually sold at the German Christmas markets. They're chewy, crisp, and like an almond macaroon which you can make easily at home.

- Line a clean baking tray with parchment paper
- Attach Whisk
- Add egg white to the Kenwood Bowl
- Mix with splashguard fitted - 1 min, Speed Max
- Then add icing sugar to the Kenwood Bowl
- Mix with splashguard fitted - 3 min, Speed 4
- Transfer half of the meringue to medium bowl and then set aside
- Attach K Beater
- Add icing sugar, almond meal and ground cinnamon to the Kenwood Bowl
- Mix with splashguard fitted until dough forms - 2 min, Speed Min
- Line a clean work surface with parchment paper
- Place dough on work surface
- Cover with parchment paper
- Roll out until 1 cm thick
- Chill in fridge - 30 min
- Pre-heat oven - 100°C
- Dust a clean work surface with icing sugar
- Remove the dough from the fridge and peel off the parchment paper
- Place dough on work surface
- Use a star shaped cookie cutter to cut out star shapes
- Re-roll the leftover dough and repeat until all the dough has been used
- Spread the thin layer of meringue from the medium bowl onto each star biscuit
- Place biscuits on baking tray
- Bake - 40 min, 100°C
- Remove from oven and let cool
- Serve
