This recipe can serve as a basis for many other recipes, such as fresh tomato sauce, ketchup, soup, or bruschetta. Once peeled, use immediately or freeze in batches for up to 3 months – this is a great way to keep that glut of summer tomatoes going through the winter. The skins themselves can be dried and blitzed to a powder to make a delicious, umami seasoning that adds oomph to any meat or veg and prevents waste too.
