This recipe is the perfect antidote to a hot summer’s day; lip smackingly sharp, sweet, and zesty, lemon gelato is surprisingly easy to make at home with a small amount of prep and can be stashed in the freezer until needed. Dextrose powder helps to create the gloriously dense, smooth texture of traditional gelato, but don’t worry if you can’t find it – simply replace with the same weight of sugar. Remember to place the freezer bowl in the freezer 24 hours in advance.

Step preview

  1. Fit the Creaming Beater
  2. Add the ingredients into the appliance bowl, fit the splashguard
  3. Heat - 1 minute, 60ºC, speed Stir 1
  4. Then add the syrup
  5. Mix – 5 minutes, speed Stir 1
  6. Add the ingredients
  7. Heat until combined and no lumps remain – 2 minutes, 85ºC, speed Stir 1
  8. Cook – 7 minutes, 95ºC, speed Stir 1
  9. Pour the mixture into a large bowl and cover with plastic wrap
  10. Chill in the fridge until cold – 2 hours
  11. Attach the Frozen Dessert Maker attachment to the machine
  12. Set the speed to Min
  13. Remove the chilled gelato mixture from the fridge
  14. Add lemon juice into the bowl and mix to combine
  15. Pour the mixture into the Frozen Dessert Maker carefully
  16. Mix – 30 minutes, speed Min
  17. Transfer the gelato to an airtight container and cover with a lid
  18. Chill in the freezer overnight or until set
  19. Serve
