Bursting with oozing ricotta and pecorino, these raviolis are surprisingly easy to make, with a little help from a ravioli tray, which makes light work of the filling process. Here they are served with garlic, fresh tomatoes and basil for a hearty meal bursting with classic Italian flavours.

Step preview

  1. Fit the K-Beater
  2. Add the ingredients into the appliance bowl, fit the splashguard
  3. Mix - 1 minute, speed Min
  4. Mix - 3 minutes, speed 1
  5. Place the dough on a lightly floured work surface
  6. Knead until smooth – about 5 minutes
  7. Wrap the dough in plastic wrap and chill in the fridge – 30 minutes
  8. Clean the appliance bowl and fit the K-Beater
  9. Add the next ingredients into the appliance bowl, fit the splashguard
  10. Mix until well combined - 1 minute, speed Min
  11. Set aside until needed
  12. Divide the dough in 4 equal pieces
  13. Take one piece and flatten until about 1cm thick
  14. Cover the rest with a kitchen towel to prevent drying out
  15. Attach the Pasta Roller attachment
  16. Adjust the setting to 0
  17. Sprinkle some flour between the rollers
  18. Start on speed 1
  19. Pass the dough through the rollers
  20. Repeat passing the dough through the rollers, adjusting the setting down each time until you reach setting 9
  21. Repeat the same with the rest of the dough
  22. Remove the attachment from the machine
  23. Sprinkle a ravioli tray with a little flour
  24. Cut the rolled dough into sheets slightly larger than the ravioli tray
  25. Line the ravioli tray with the pasta sheet and press gently into the holes
  26. Fill each hole with 1 tsp of the ricotta filling
  27. Place another sheet of pasta on top and roll with the rolling pin to seal
  28. Remove the ravioli from the tray, discard any excess dough
  29. Repeat the same with the remaining filling and pasta
  30. Clean the appliance bowl and fit the Stir Tool
  31. Add oil into the appliance bowl, fit the splashguard
  32. Heat - 1 minute, 110ºC, speed off
  33. Then add the next ingredient
  34. Cook - 1 minute, 110ºC, speed Stir 1
  35. Add the following ingredients
  36. Cook - 5 minutes, 120ºC, speed Stir 2
  37. Fill a large saucepan with water and bring to the boil, then season well with salt
  38. Add the ravioli into the saucepan
  39. Simmer until they float – 4 minutes
  40. Drain the raviolis into a colander
  41. Remove the Stir Tool
  42. Add the raviolis and the remaining ingredients into the appliance bowl
  43. Use a wooden spoon to gently combine by hand
  44. Serve
