Originating in Devon, homity pie is a comforting dish traditionally made with low-cost, humble ingredients such as potatoes, cheese, and onions. While this pie is delicious served straight from the oven, any leftovers can be enjoyed cold alongside a sharply dressed salad for a tasty lunch. The best potatoes to use are the floury kind, such as Maris Piper or King Edward. Store leftovers for up to three days in the fridge, or the pie can be made ahead and frozen before baking – simply defrost in the fridge overnight before baking.
