Silky smooth and packed with sweet and acidic tomatoes, this creamy pasta is given a boost with the addition of vodka, which helps to bring all the delicious flavours together. Any leftovers can be refrigerated in an airtight container for up to three days.

  1. Fit the Stir Tool and Stir Assist Clip
  2. Add butter into the appliance bowl
  3. Heat - 1 minute, 110ºC, speed Stir 1
  4. Add the next ingredients, fit the splashguard
  5. Cook - 10 minutes, 110ºC, speed Stir 2
  6. Remove the splashguard
  7. Add the next ingredient
  8. Cook - 5 minutes, 120ºC, speed Stir 2
  9. Then add tomatoes
  10. Cook - 10 minutes, 105ºC, speed Stir 3
  11. Add the next ingredients
  12. Stir - 3 minutes, speed Stir 1
  13. Let cool – 5 minutes
  14. Transfer the tomato mixture into the Blender attachment
  15. Blend until smooth - 1 minute, speed 3
  16. Remove the attachment from the machine
  17. Clean the appliance bowl and fit the Stir Tool
  18. Add the blended sauce into the appliance bowl
  19. Heat – 15 minutes, 96ºC, speed Stir 1
  20. Add water into a saucepan and bring to the boil
  21. Add salt, stir to dissolve and then add pasta
  22. Cook until al dente - 9 minutes, medium-high heat
  23. Drain pasta into a colander, reserving 120 g of the cooking water in a jug, then set aside
  24. Add vodka into the appliance bowl
  25. Cook - 2 minutes, 110ºC, speed Stir 2
  26. Then add the pasta and reserved cooking water
  27. Cook - 5 minutes, 110ºC, speed Stir 2
  28. Add cheese
  29. Stir - 2 minutes, speed Stir 1
  30. Serve
