These fun breads are served on St Nicholas Day in Germany - 6th December - in little boots filled with treats and small gifts if you've been good. They are traditionally baked with small oven safe clay pipes which are available online outside of Germany and decorated with pearl sugar 'gloves' and 'boots'. Try using a large gingerbread man cutter or draw a template 15- 20 cm long to cut around.

Step preview

  1. Line a baking tray with parchment paper
  2. Fit the Dough Tool
  3. Add milk and yeast into the appliance bowl, fit the splashguard
  4. Heat - 5 minutes, 30ºC, speed off
  5. Then add the ingredients into the appliance bowl
  6. Mix – 10 minutes, speed 1
  7. Remove the Dough Tool
  8. Prove – 1 hour, 30ºC, speed off
  9. Place the dough on a lightly floured work surface
  10. Using a rolling pin, roll out until 1cm thick
  11. Cut the dough into people’s shape
  12. Place the shaped dough on the baking tray
  13. Cover with a tea towel and let rest – 30 minutes
  14. Preheat an oven - 180ºC
  15. Brush the dough with beaten egg
  16. Decorate with raisins and sugar
  17. Bake – 20 minutes, 180ºC
  18. Remove from the oven and let cool
  19. Serve
