Tigelle are round, airy flatbreads and are a popular street food in Emilia-Romagna in Italy. As soon as they are cooked, split them open and fill with your favourite selection of cured meats and cheeses.

Step preview

  1. Add the ingredients into the appliance bowl and mix to combine
  2. Let rest – 10 minutes
  3. Fit the Dough Tool

  5. Knead until smooth and elastic - 10 minutes, speed 1
  6. Shape the dough into a ball, place in a large bowl and cover
  7. Prove in a warm place – 1 hour
  8. Place the dough on a lightly floured work surface
  9. Using a rolling pin, roll out the dough until 0.5cm thick
  10. Using a 10cm round cutter, cut out circles
  11. Re-roll the remaining dough and cut out more circles, until you have 16
  12. Lightly flour two large baking trays and place eight circles, spaces apart, on each tray
  13. Cover the trays with plastic wrap or damp tea towel
  14. Prove in a warm place – 1 hour
  15. Pre-heat a large non-stick frying pan – medium-high heat
  16. Working in batches, place the tigelle in the dry pan
  17. Cook – 4 minutes, medium-high heat
  18. Flip over and cook until puffy with brown spots – 4 minutes, medium-high heat
  19. Serve
