A zingy, sweet treat! Make the day before you need it to save time but also let the flavours develop, also if you want a stronger ginger flavour make the infused honey a few days before and let the ginger steep. While all honey works well with ginger, we would recommend a heather honey. Not only will you make something delicious, but you will also make a dessert with added health benefits like boosted antioxidants.

  1. Fit the Stir Tool
  2. Add the ingredients into the appliance bowl
  3. Cook until the flavours infused - 8 minutes, 75ºC, speed Stir 3
  4. Strain the mixture into a jug and let cool
  5. Line the tin with parchment paper
  6. Add the next ingredients into a clean bowl and mix to combine
  7. Transfer the biscuit base into the tin and press to level
  8. Clean the appliance bowl and fit the Stir Tool
  9. Add the ingredients into the appliance bowl
  10. Cook until combined - 3 minutes, 95ºC, speed Stir 1
  11. Then add drained gelatine
  12. Stir until dissolved -3 minutes, speed Stir 1
  13. Transfer the mixture into a clean jug and let cool
  14. Clean the appliance bowl and fit the Whisk Tool
  15. Add the ingredients into the appliance bowl
  16. Whisk until smooth – 2 minutes, speed 2
  17. Transfer the cooled cream and infused honey into the appliance bowl
  18. Whisk until thickened – 2 minutes, speed 4
  19. Pour the creamy mixture over the biscuit base
  20. Chill in the fridge – 4 hours
  21. Decorate the cheesecake
  22. Serve
