This sweet mousse is a perfect summer dessert. Using different honeys will subtly change the flavour of the mousse. We recommend you use a floral honey, preferably a local wildflower honey.

  1. Fit the Creaming Beater
  2. Add chocolate into the appliance bowl
  3. Mix until melted - 10 minutes, 60°C, speed Stir 1
  4. Transfer the melted chocolate into a clean bowl and set aside
  5. Clean the appliance bowl and fit the Whisk Tool
  6. Add egg whites into the appliance bowl
  7. Add sugar gradually while the machine is running
  8. Whisk until stiff peaks form – 2 minutes, speed Max
  9. Transfer the whisked whites into a clean bowl and set aside
  10. Add the ingredients into the appliance bowl
  11. Whisk until the mixture turned pale yellow – 2 minutes, speed 6
  12. Then add the melted chocolate and butter
  13. Whisk until combined – 2 minutes, speed 3
  14. Then add the next ingredients
  15. Whisk until creamy – 2 minutes, speed 4
  16. Then transfer the beaten egg whites into the appliance bowl
  17. Whisk until combined then scrape the sides of the bowl – 5 minutes, speed 2
  18. Whisk until blended – 3 minutes, speed 2
  19. Transfer the pudding into serving glasses
  20. Chill in the fridge – 1 hour
  21. Clean the appliance bowl and fit the K-Beater
  22. Add the ingredients into the appliance bowl
  23. Cook until thickened - 5 minutes, 100ºC, speed Stir 1
  24. Let cool
  25. Spoon the raspberry coulis on top of the pudding
  26. Serve
