A classic honey cake. This recipe makes three 10cm (4-inch) cakes but can be scaled up to make six cakes. These are perfect for gifting, BBQ's, picnics, or parties. The type of honey with subtly change the flavour of the cakes and while any honey with make fantastic tasting cakes, we recommend using an orange blossom, wildflower, or herbal honey.

Step preview

  1. Preheat the oven - 160ºC
  2. Grease and line tins with parchment paper
  3. Fit the Creaming Beater
  4. Add the ingredients into the appliance bowl
  5. Mix until light and fluffy - 3 minutes, speed 2
  6. Then add the next ingredients
  7. Mix until smooth - 1 minute, speed 2
  8. Then add the next ingredients
  9. Mix until combined - 1 minute, speed Min
  10. Divide the batter evenly between the tins
  11. Bake until risen and firm to touch - 25 minutes, 160ºC
  12. Remove from the oven and let cool in the tins
  13. Transfer the cakes to a wire rack and let cool completely
  14. Clean the appliance bowl and fit the Whisk Tool
  15. Add the ingredients into the appliance bowl
  16. Whisk until stiff peaks form - 1 minute, speed Max
  17. Slice each cake into two layers
  18. Spread the cream evenly on the three cake halves
  19. Top with the other cake halves
  20. Decorate the cakes
  21. Serve
