A quick, easy but tasty traybake that is great to take to coffee afternoons or picnics. Try adjusting the coffee flavour to your taste or swap it completely for 50 g cocoa powder, just remember to reduce the flour by the same amount.

Step preview
- Making the sponge:
- Preheat the oven - 180ºC
- Grease a traybake tin and line with parchment paper
- Add the ingredients into a small bowl and stir by hand until the coffee has dissolved
- Fit the K-Beater
- Add the ingredients into the appliance bowl
- Then add the coffee mix
- Mix until combined - 2 minutes, speed 3
- Transfer the batter into the tin
- Bake until a skewer inserted comes out clean - 20 minutes, 180ºC
- Remove from the oven and let cool in the tin - 5 minutes
- Transfer to a cooling rack and let cool completely
- Making the icing:
- Clean the appliance bowl and fit the Whisk Tool
- Add butter into the appliance bowl
- Whisk until light and fluffy - 3 minutes, speed 4
- Then add sugar
- Whisk until combined - 30 seconds, speed Min
- Whisk until smooth - 5 minutes, speed 3
- Then add the next ingredients
- Whisk until combined - 2 minutes, speed 3
- Spread the icing onto the sponge and level with a spatula
- Then drizzle the cake with caramel
- Serve
