Make these fun little treats for parties or to give as edible gifts. This recipe makes up to 40 truffles from just one 20 cm round sponge layer, so we recommend freezing half the cake and icing separately. To do this, wrap tightly or store in an airtight container, then freeze for up to one month. Once made, the truffles can be stored in an airtight container in the fridge for one week.

Step preview

  1. Making the sponge:
  2. Preheat the oven - 180ºC
  3. Grease a tin and line with parchment paper
  4. Fit the K-Beater
  5. Add the ingredients into the appliance bowl
  6. Mix until combined - 2 minutes, speed 5
  7. Transfer the batter into the tin
  8. Bake until a skewer inserted comes out clean - 25 minutes, 180ºC
  9. Remove from the oven and let cool in the tin - 5 minutes
  10. Transfer to a cooling rack and let cool completely
  11. Once cooled, crumble the sponge cake into a clean bowl
  12. Making the truffles:
  13. Line baking trays with parchment paper
  14. Clean the appliance bowl and fit the Creaming Beater
  15. Add the ingredients into the appliance bowl, fit the splashguard
  16. Mix until combined and then scrape the bowl - 1 minute 30 seconds, speed 3
  17. Mix until combined - 1 minute, speed 3
  18. Then add sprinkles and the cake crumbs
  19. Mix until combined - 1 minute, speed 2
  20. Roll the mixture into balls and place on the baking trays
  21. Chill in the fridge - 30 minutes
  22. Dip the truffles in the melted chocolate until coated and place back on the baking trays
  23. Decorate with sprinkles and let set
  24. Serve
