  1. Fit the K-Beater
  2. Add the ingredients into the appliance bowl
  3. Mix until combined and then scrape the bowl – 30 seconds, speed 3
  4. Then add sugar
  5. Mix until combined – 30 seconds, speed 3
  6. Then add half of flour
  7. Mix until combined – 20 seconds, speed Min
  8. Then add the remaining flour
  9. Mix until combined – 30 seconds, speed Min
  10. Remove the bowl from the machine
  11. Chill in the fridge – 45 minutes
  12. Preheat the oven – 190ºC
  13. Line a baking tray with parchment paper
  14. Using an ice-cream scoop, make 1 tablespoon sized balls of dough
  15. Place the dough balls on the baking tray
  16. Using your thumb, lightly press your thumb in the centre of each ball
  17. Then add 0.5 tsp of jam into each indentation
  18. Bake until just golden at the edges – 11-12 minutes, 190ºC
  19. Remove from the oven and let cool on the baking tray – 10 minutes
  20. Carefully transfer the cookies onto a cooling rack to cool completely
  21. Serve
