Step preview

  1. Add the lamb into the roasting tin
  2. Using a sharp knife, pierce the lamb all over, cutting about 1 cm deep
  3. Season all over with salt and pepper
  4. Fit the Knife Blade to the Food Processor attachment
  5. Add the ingredients into the attachment
  6. Mix until combined, then scrape the sides of the attachment - 30 seconds, speed 1
  7. Mix until smooth - 30 seconds, speed 1
  8. Remove the attachment from the machine
  9. Rub the lamb with the marinade, massaging it into the cuts
  10. Chill in the fridge - 4 hours
  11. Preheat the oven - 170ºC
  12. Place the roasting tin in the oven and roast - 50 minutes, 170ºC
  13. Then add wine into the roasting tin
  14. Roast until desired doneness - 1 hour 15 minutes, 170ºC
  15. Transfer the lamb onto a serving plate and cover loosely with foil
  16. Let rest - 30 minutes
  17. Pour over the roasting juices
  18. Serve
