Smoky, spicy bean dish originally from America. A fantastic side for BBQs. If you would prefer less spice, you could half the jalapeno and hot sauce quantities. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months and reheat before serving.

Step preview

  1. Add the ingredients into a clean bowl
  2. Then add water until the beans are covered
  3. Cover the bowl and let soak overnight at room temperature
  4. Line a plate with paper towels
  5. Fit the Stir Tool
  6. Add oil into the appliance bowl, attach the lid without the filler cap
  7. Heat until hot - 140ºC, speed 3
  8. Then add bacon
  9. Cook until browned - 8 minutes, 120ºC, speed 3
  10. Transfer the bacon onto the lined plate, leaving as much bacon fat in the bowl as possible
  11. Assemble the Direct Prep attachment with the Thick slicing disc, and turn it to position 1
  12. Slice onion into the appliance bowl
  13. Then add salt, attach the lid with the filler cap
  14. Cook until the onion has softened - 10 minutes, 120ºC, speed 3
  15. Then add the next ingredients
  16. Cook until combined - 1 minute, 120ºC, speed 3
  17. Remove the filler cap
  18. Then add chicken stock, the drained beans and the cooked bacon
  19. Cook until the beans have softened - 1 hour, 98ºC, speed 1
  20. Then add the next ingredients
  21. Cook until thickened - 4 hours, 98ºC, speed 1
  22. Fit the filler cap
  23. Cook until the beans are tender, and the mixture thickened - 1 hour 30 minutes, 98ºC, speed 2
  24. Serve
