Spanish tortilla is a classic, comforting tapas dish made with just a few simple ingredients - eggs, potatoes, and onions, slowly cooked in plenty of olive oil until golden brown and just set. Delicious warm or cold, this dish is the perfect addition to any tapas spread and makes an excellent light lunch alongside a sharp salad.

  1. Fit the slicing disc, setting 2 to the Food Processor attachment
  2. Prepare onion and potatoes for the attachment
  3. Slice onion in batches, if necessary - speed 1
  4. Transfer the sliced onions into a clean bowl and set aside
  5. Slice potatoes in batches, if necessary - speed Min
  6. Transfer the sliced potatoes into a clean bowl and set aside
  7. Add oil into a frying pan
  8. Heat until hot - medium heat
  9. Then add the sliced onions
  10. Fry, stirring occasionally, until softened - 5 minutes
  11. Then add the sliced potatoes
  12. Fry, stirring every 3 minutes, until the potatoes are cooked through - 20 minutes
  13. Once cooked, remove from the heat
  14. Fit the Whisk Tool
  15. Add the ingredients into the appliance bowl
  16. Whisk until well beaten - 3 minutes, speed 1
  17. Remove the bowl from the machine
  18. Using a slotted spoon, transfer the onion and potatoes into the whisked eggs and mix well
  19. Then add the mixture back into the frying pan, ensuring that the potatoes and onion are lying flat in the pan
  20. Fry until the edges of the omelette begin to set - 2 minutes, medium-low heat
  21. Run the spatula around the outer edge of the pan, ensuring the eggs are not sticking
  22. Fry until the mixture starts to set underneath - 3 minutes
  23. Place a plate over the top of the pan
  24. Working carefully, but quickly, flip the omelette onto the plate, then gently slide the omelette back into the pan
  25. Use a spatula to tuck the edges of the omelette beneath itself to achieve a rounded edge
  26. Fry until just set and cooked through - 5 minutes
  27. Transfer the omelette to a serving plate and let cool - 5 minutes
  28. Serve
