An easy summer dessert that can be made the day before you need it. We have finished ours off with a drizzle of lemon curd after chilling, but you could swirl it into the cheesecake mix before chilling or decorate with fresh lemon and edible flowers instead.

Step preview

  1. Line the bottom of the tin with parchment paper
  2. Fit the Knife blade to the Food Processor attachment
  3. Add biscuits into the attachment
  4. Blend until crumbs have formed - about 20 seconds, speed 4
  5. Remove the attachment from the machine
  6. Transfer the biscuit crumbs into a clean bowl
  7. Then add the melted butter and mix to combine
  8. Add the mixture to the tin, press until firm and level
  9. Chill in the fridge until ready to use
  10. Fit the Whisk Tool
  11. Add whipping cream into the warming bowl
  12. Heat until warm - 3 minutes, heat setting 7, speed Min
  13. Then add the soaked and drained gelatine
  14. Whisk until combined - 3 minutes, speed Min
  15. Transfer the mixture to a jug and let cool
  16. Add the next ingredients into the warming bowl
  17. Whisk until combined - 1 minute, speed Max
  18. Then add the cooled cream mixture
  19. Whisk until combined - 3 minutes, speed 3
  20. Pour the mixture into the tin
  21. Chill in the fridge - 4 hours
  22. Drizzle with lemon curd
  23. Serve
