  1. Making the choux:
  2. Fit the Creaming Beater
  3. Add the ingredients into the appliance bowl
  4. Mix until the butter has melted - 2 minutes, 104ºC, speed Stir 1
  5. Then add flour
  6. Mix until well combined - 2 minutes, 104ºC, speed 3
  7. Then add eggs while the machine is running
  8. Mix until well combined - 2 minutes, speed 3
  9. Transfer the pastry into a clean bowl and let cool - 20 minutes
  10. Once cool, transfer the pastry into a piping bag fitted with a medium, round tip
  11. Preheat the oven - 200ºC
  12. Pipe round buns onto the tray, about 2 cm wide, spacing them 2.5 cm apart
  13. Use a wet finger to smooth over any peaks on the surface
  14. Bake until golden - 25 minutes, 200ºC
  15. Remove the choux buns from the oven
  16. Prick each pastry with a skewer to make a small hole and allow steam to escape
  17. Bake until dry - 5 minutes, 200ºC
  18. Remove from the oven and let cool completely
  19. Making the filling:
  20. Clean the appliance bowl and fit the Whisk Tool
  21. Add the ingredients into the appliance bowl, fit the splashguard
  22. Whisk until stiff peaks have formed - 1 minute 30 seconds, speed Max
  23. Transfer the whipped cream to piping bag fitted with a small, round tip
  24. Pipe the cream into each choux bun until filled
  25. Arrange the choux buns onto a board into a wreath shape
  26. Clean the appliance bowl and fit the Creaming Beater
  27. Add the ingredients into the appliance bowl
  28. Heat until melted - 5 minutes, 45ºC, speed Stir 1
  29. Using a spoon or piping bag, drizzle the chocolate sauce all over the choux wreath
  30. Garnish, if desired
  31. Serve
