Step preview

  1. Add the ingredients into a saucepan
  2. Heat until the butter has melted - medium heat
  3. Then add the next ingredients
  4. Cook, stirring frequently, until the leeks have softened - 10 minutes
  5. Then add garlic
  6. Cook until fragrant - 3 minutes
  7. Then add the next ingredients
  8. Bring to a simmer and cook until the potatoes have softened - 15 minutes
  9. Remove the saucepan from the heat and let cool slightly - 5 minutes
  10. Transfer the soup into the Blender attachment
  11. Blend until smooth - 1 minute, speed 5
  12. Transfer the soup back into the saucepan
  13. Heat, stirring occasionally - 5 minutes, low heat
  14. Remove the saucepan from the heat
  15. Then add the next ingredients
  16. Stir well until combined
  17. Divide the soup between serving bowls
  18. Top with chives and cheese
  19. Serve
