Inspired by Malaysian laksa, this soup is fragrant with ginger, garlic, chilli and coconut, the perfect accompaniment to soft, chewy udon noodles. Once cooled, store the soup in an air-tight container in the fridge for up to 5 days, or freeze for up to 3 months.

Step preview

  1. Add oil into a saucepan
  2. Heat until hot - medium heat
  3. Then add the next ingredients
  4. Cook, stirring frequently, until softened - 10 minutes
  5. Then add the next ingredients
  6. Cook until fragrant - 3 minutes
  7. Then add coconut milk
  8. Bring to a simmer and cook until thickened - 10 minutes
  9. Remove the saucepan from the heat and let cool - 5 minutes
  10. Transfer the soup into the Blender attachment
  11. Then add the next ingredients
  12. Blend until smooth - about 1 minute, speed 5
  13. Remove the attachment from the machine
  14. Divide the noodles between serving bowls
  15. Top with the blended soup
  16. Garnish with coriander, chilli and sesame seeds
  17. Serve
