Step preview

  1. Preheat the oven - 200ºC
  2. Line a baking tray with parchment paper
  3. Add the ingredients to a baking tray
  4. Drizzle with oil and season to taste
  5. Toss to combine
  6. Roast until the beetroots are soft - 30 minutes, 200ºC
  7. Fit the Stir Tool
  8. Add oil into the appliance bowl
  9. Heat until hot - 1 minute, 140ºC, speed Off
  10. Then add the next ingredients
  11. Cook until the vegetables have softened - 15 minutes, 120ºC, speed Stir 2
  12. Transfer the roasted beetroot and garlic into the appliance bowl
  13. Then add stock
  14. Cook until the liquid has reduced - 10 minutes, 95ºC, speed Stir 2
  15. Transfer the soup into a clean bowl and let cool - 10 minutes
  16. Then add the next ingredients into the bowl and stir until combined
  17. Add half of the soup into the Blender attachment
  18. Blend until smooth - 2 minutes, speed 4
  19. Transfer the blended soup into the appliance bowl
  20. Repeat the same process with the remaining soup
  21. Cook until heated through - 5 minutes, 95ºC, speed Stir 1
  22. Serve
