Sweet, tart blackcurrants on soft, buttery brioche. What could be better? These fruit filled buns can be served for a quick breakfast with coffee or as part of a brunch spread for friends. Try swapping the blackcurrants for blackberries, raspberries or blueberries for a seasonal change.

Step preview

  1. Line a baking tray with parchment paper
  2. Fit the Dough Tool
  3. Add the ingredients into the appliance bowl
  4. Let rest - 5 minutes
  5. Then add the next ingredients and fit the splashguard
  6. Knead until the dough has formed - about 5 minutes, speed Min
  7. Remove the bowl from the machine and cover with a tea towel
  8. Prove until doubled in size - 1 hour
  9. Transfer the dough to a lightly floured work surface
  10. Divide the dough into 70 g pieces and shape into balls
  11. Place the dough balls on the baking tray and cover with a tea towel
  12. Prove until the dough has risen - 45 minutes
  13. Add the ingredients to a saucepan
  14. Cook until the fruit has burst and thickened - medium heat
  15. Remove from the heat and let cool
  16. Preheat the oven - 180ºC
  17. Press down on the centre of each dough ball to form a hollow with raised edges
  18. Spoon some filling into each disc
  19. Brush the edges of each bun with beaten egg
  20. Bake until golden brown - 15 minutes, 180ºC
  21. Remove from the oven and let cool
  22. Add icing sugar to a clean bowl
  23. Then add a little water and mix until it formed a thin glaze
  24. Drizzle the glaze onto each bun
  25. Serve
