Step preview

  1. Sift the ingredients into a bowl
  2. Repeat the process, stir to combine and set aside
  3. Grease baking trays and line with parchment paper
  4. Fit the Creaming Beater
  5. Add the ingredients into the appliance bowl, fit the splashguard
  6. Mix until soft and light - 1 minute, speed 3
  7. Then add egg yolks gradually while the machine is running
  8. Mix until combined - 30 seconds, speed 1
  9. Then add the flour mixture
  10. Mix until a dough has formed - 40 seconds, speed 1
  11. Transfer the dough to a lightly floured work surface
  12. Divide the dough in half
  13. Roll each half into a log shape, about 2.5cm (1”) in diameter
  14. Wrap the dough in plastic wrap and chill in the fridge - at least 1 hour
  15. Preheat the oven - 150ºC
  16. Roll each dough log in granulated sugar and slice into 7mm (0.25”) rounds
  17. Place the dough rounds on the baking trays, spacing them 2.5cm (1”) apart
  18. Bake until lightly golden - 20-25 minutes, 150ºC
  19. Remove from the oven and let cool
  20. Serve
