These American style scones are great for a sweet breakfast or with a cup of coffee mid-morning. They will keep for 2 days covered on the side. This recipe makes more pumpkin puree than used in soups, risottos or drinks, you can also freeze the puree for up to 3 months. You can mash pumpkin by hand, in a food processor or blender.

Step preview

  1. Preheat the oven - 170ºC
  2. Place the pumpkin cut side down on a baking tray
  3. Bake until tender - 45 minutes, 170ºC
  4. Remove from the oven, let cool slightly, then remove the skin
  5. Increase the oven temperature - 200ºC
  6. Mash the pumpkin until smooth and let the puree cool completely
  7. Line a clean baking tray with parchment paper
  8. Fit the K-Beater
  9. Add the ingredients into the appliance bowl
  10. Mix until coarse crumbs form - about 2 minutes, speed 2
  11. Add the ingredients into a jug
  12. Then add 115 g of the pumpkin puree and whisk by hand to combine
  13. Transfer the mixture into the appliance bowl
  14. Mix until a dough forms - about 3 minutes, speed 2
  15. Transfer the dough to a lightly floured work surface
  16. Roll out the dough into a disc, about 20 cm wide
  17. Cut the disc into 8 wedges and place them on the prepared baking tray, spaced apart
  18. Brush the dough with cream
  19. Bake until lightly brown - 20-25 minutes, 200ºC
  20. Remove from the oven and let cool
  21. Add the ingredients into a small bowl
  22. Then add water, enough to make a thin icing, and mix to combine
  23. Drizzle the icing over the scones
  24. Serve
