Step preview

  1. Pre-heat oven - 175°C
  2. Line 2 clean round pans with parchment paper then set aside
  3. Attach K Beater
  4. Add butter and caster sugar to the Kenwood Bowl
  5. Mix with splashguard fitted then scrape bowl - 3 min, Speed 4
  6. Add egg to the Kenwood Bowl gradually while machine is running
  7. Mix with splashguard fitted - 2 min, Speed Min
  8. Then add vanilla extract and milk to the Kenwood Bowl
  9. Mix with splashguard fitted - 30 sec, Speed Min
  10. Then add plain flour and baking powder to the Kenwood Bowl
  11. Mix with splashguard fitted - 1 min, Speed Min
  12. Divide batter between 2 round pans
  13. Spread evenly
  14. Bake until skewer tests clean - 20 min, 175°C
  15. Cool onto cooling rack
  16. Transfer one cake to serving plate
  17. Spread with strawberry jam evenly
  18. Place the other sponge on top and press down gently
  19. Dust with icing sugar
  20. Serve
