- Pre-heat oven - 175°C
- Line 2 clean round pans with parchment paper then set aside
- Attach K Beater
- Add butter and caster sugar to the Kenwood Bowl
- Mix with splashguard fitted then scrape bowl - 3 min, Speed 4
- Add egg to the Kenwood Bowl gradually while machine is running
- Mix with splashguard fitted - 2 min, Speed Min
- Then add vanilla extract and milk to the Kenwood Bowl
- Mix with splashguard fitted - 30 sec, Speed Min
- Then add plain flour and baking powder to the Kenwood Bowl
- Mix with splashguard fitted - 1 min, Speed Min
- Divide batter between 2 round pans
- Spread evenly
- Bake until skewer tests clean - 20 min, 175°C
- Cool onto cooling rack
- Transfer one cake to serving plate
- Spread with strawberry jam evenly
- Place the other sponge on top and press down gently
- Dust with icing sugar
- Serve
