Step preview

  1. Line a clean baking sheet with parchment paper
  2. Attach the Dough Tool
  3. Add water, milk and dried yeast to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Heat with splashguard fitted - 10 min, 35°C, Speed OFF
  6. Then add plain flour, unsalted butter and salt to the Cooking Chef XL Bowl
  7. Mix with splashguard fitted - 10 min, Speed 1
  8. Remove the Dough Tool
  9. Prove with splashguard fitted - 1 hr, 30°C, Speed OFF
  10. Transfer dough to lightly floured surface
  11. Flatten the dough carefully with your wrist
  12. Take the far edge and roll it back towards you
  13. Gently roll the dough into a sausage shape, being careful to apply even and gentle pressure
  14. Divide into 12 equal pieces
  15. Make each piece into a rough ball shape
  16. Let rest - 10 min
  17. Take one piece of dough and flatten it with your wrist
  18. Take the far edge and roll it back towards you
  19. Gently roll the dough into a sausage shape, being careful to apply even and gentle pressure
  20. Continue to roll out into a long rope
  21. Put the rope into a ‘U’ shape
  22. Cross the open ends over each other to form a twist
  23. Bring the twisted end down over the bottom of the U and press to seal to make a pretzel shape
  24. Transfer dough to baking sheet
  25. Cover with kitchen towel
  26. Let rest - 30 min
  27. Pre-heat oven - 200°C
  28. Add bicarbonate of soda and water to the Cooking Chef XL Bowl
  29. Cook with splashguard fitted and continue - 15 min, 150°C
  30. Transfer dough to Cooking Chef XL Bowl bit by bit
  31. Use a slotted spoon to place 2 pretzels at a time into the bowl, using the feed chute.
  32. Boil for 10 seconds then flip and boil for 10 more seconds
  33. Remove the pretzels from the bowl, through the feed chute, using a slotted spoon and place back on the baking tray
  34. Sprinkle with sea salt
  35. Bake - 20 min, 200°C
  36. Let cool on round wire rack
  37. Serve
