  2. Add water, quick-rise yeast and rye flour to the Kenwood Bowl
  3. Mix with splashguard fitted - 1 min, Speed Min
  4. Let rest - 3 hr
  5. Attach Dough Hook
  6. Add water, plain flour and salt to the Kenwood Bowl
  7. Mix with splashguard fitted - 10 min, Speed 1
  8. Remove the bowl from the machine
  9. Cover with kitchen towel
  10. Prove - 1 hr 30 min
  11. Transfer dough to lightly floured surface
  12. Divide into 2 equal pieces
  13. Shape into balls
  14. Grease a clean baking tray
  15. Transfer shaped dough to baking tray
  16. Cover with kitchen towel
  17. Prove - 1 hr 30 min
  18. Pre-heat oven - 250°C
  19. Spray with water
  20. Dust with plain flour
  21. Cut a cross shape on the top of each loaf
  22. Bake - 10 min, 250°C
  23. Bake - 30 min, 210°C
  24. Let cool onto cooling rack
  25. Serve
