This pastry cream, inspired by the classic Crème Pâtissière, has the addition of cream for a richer result. Ideal for filling various pastries, a large gateaux or Paris-Brest. This recipe makes 1360g of pastry cream. For a smaller quantity use our recipe for 'Cream-based Crème Pâtissière' instead.

  2. Add egg yolk, caster sugar and cornflour to the Cooking Chef XL Bowl

  4. Mix with splashguard fitted until combined - 30 sec, Speed 1
  5. Add whole milk, whipping cream and vanilla extract to a clean jug
  6. Pour content of jug into Cooking Chef XL Bowl while machine is running
  7. Mix with splashguard fitted - 30 sec, Speed 1
  8. Cook with splashguard fitted - 18 min, 85°C, Speed Min
  9. Strain content of Cooking Chef XL Bowl into large mixing bowl
  10. Cover the surface with plastic wrap to prevent a skin from forming
  11. Chill in fridge until completely cool
  12. Use
