Chewy and rich chocolate caramels. Divide them up and wrap in greaseproof paper for a sweet treat gift.

Step preview

  1. Line a clean square pan with parchment paper
  2. Attach the Creaming Beater
  3. Add whipping cream to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Cook with splashguard fitted until thickened - 1 min, 105°C, Stir 1
  6. Transfer cream to jug
  7. Cover with plastic wrap then set aside
  8. Clean Cooking Chef bowl
  9. Attach the Creaming Beater
  10. Add caster sugar and glucose syrup to the Cooking Chef XL Bowl
  11. Cook with splashguard fitted until sugar has dissolved - 25 min, 180°C, Stir 2
  12. Transfer cream to Cooking Chef XL Bowl gradually
  13. Cook with splashguard fitted until thickened - 5 min, 115°C, Stir 1
  14. Then add dark chocolate and butter to the Cooking Chef XL Bowl
  15. Mix with splashguard fitted until smooth - 2 min, Stir 1
  16. Pour chocolate mixture into square pan and let cool
  17. Chill overnight in fridge until set
  18. Remove the chocolate caramel from the tin
  19. Cut into pieces
  20. Serve
