A traditional French recipe for an almond tart consisting of a sweet pastry case filled with almond frangipane, topped with flaked almonds. Add a teaspoon of almond extracts to the frangipane filling if you prefer a stronger almond flavour.

Step preview

  1. Grease a clean tart tin
  2. Attach the K-Beater
  3. Add unsalted butter, plain flour, icing sugar, ground almonds and salt to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Mix with splashguard fitted until light and fluffy - 5 min, Speed 1
  6. Add egg to the Cooking Chef XL Bowl gradually while machine is running
  7. Mix with splashguard fitted until mixture comes together - 30 sec, Speed 2
  8. Roll into a ball
  9. Wrap with plastic wrap
  10. Chill in fridge - 1 hr
  11. Transfer pastry to lightly floured surface
  12. Roll out until 3mm thick
  13. Transfer pastry to tart tin
  14. Place the tart tin on a large baking tray
  15. Chill in fridge - 20 min
  16. Pre-heat oven - 170°C
  17. Line the pastry case with parchment paper and fill with baking beans
  18. Bake until set - 12 min, 170°C
  19. Remove the parchment paper and baking beans
  20. Bake - 5 min, 170°C
  21. Remove from oven and let cool
  22. Clean Cooking Chef bowl
  23. Attach the Creaming Beater
  24. Add unsalted butter, caster sugar, ground almonds and plain flour to the Cooking Chef XL Bowl
  25. Mix with splashguard fitted until light and fluffy - 2 min, Speed 3
  26. Then add egg and whipping cream to the Cooking Chef XL Bowl
  27. Mix with splashguard fitted until combined - 1 min, Speed 2
  28. Transfer mixture to pastry
  29. Scatter flaked almonds over the pastry
  30. Bake until golden brown and let cool - 25 min, 170°C
  31. Serve
