This classic Romesco sauce recipe is full of flavour from peppers, almonds and paprika. It is traditionally served as an accompaniment to fish. You can use either fresh red bell peppers or roasted red peppers for a more intense flavour.

Step preview

  1. Attach the Stir Tool
  2. Add almonds to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted until lightly browned - 15 min, 180°C, Stir 3
  5. Transfer the almonds into the large bowl and set aside
  6. Add olive oil to the Cooking Chef XL Bowl
  7. Attach the Stir Tool and Stir Assist Clip
  8. Cook until hot - 2 min, 120°C, Speed OFF
  9. Then add garlic clove, onion and red bell pepper to the Cooking Chef XL Bowl
  10. Cook until translucent - 6 min, 120°C, Stir 2
  11. Transfer content of the Cooking Chef XL bowl into the large bowl containing the roasted almonds
  12. Add plum tomatoes, sherry vinegar, stale bread, paprika, salt, black pepper and extra virgin olive oil to the Glass thermoresist blender
  13. Transfer the content of the large bowl into the Thermoresist Glass Blender
  14. Assemble the Thermoresist Glass Blender attachment to the machine
  15. Attach the lid and ensure it is securely closed
  16. Pulse until smooth
  17. Serve
