Step preview

  1. Fit stir tool to kCook bowl
  2. Add mango, caster sugar and pectin to the kCook bowl
  3. Fit kCook bowl to kCook Multi
  4. Attach lid to kCook bowl with filler cap fitted
  5. Cook with filler cap fitted - 15 min, 100°C, speed 3
  6. Transfer mixture to bowl and let cool
  7. Pre-heat oven - 170°C
  8. Line a clean baking tray with parchment paper
  9. Clean kCook bowl
  10. Fit stir tool to kCook bowl
  11. Add butter to the kCook bowl
  12. Fit kCook bowl to kCook Multi
  13. Attach lid to kCook bowl with filler cap fitted
  14. Cook with filler cap fitted - 1 min, 50°C, speed 2
  15. Then add caster sugar to the kCook bowl
  16. Mix with filler cap fitted - 30 sec, speed 6
  17. Add egg to the kCook bowl gradually while machine is running
  18. Mix with filler cap fitted - 1 min, speed 6
  19. Then add plain flour and baking powder to the kCook bowl
  20. Mix with filler cap fitted - 2 min, speed 6
  21. Then add lemon to the kCook bowl
  22. Mix with filler cap fitted - 30 sec, speed 6
  23. Place the cake ring on a baking tray lined with parchment paper
  24. Transfer content of kCook bowl to cake ring
  25. Bake until skewer tests clean - 30 min, 170°C
  26. Remove from oven and let cool
  27. Clean kCook bowl
  28. Fit whisk tool to kCook bowl
  29. Add mascarpone cheese, whipping cream, vanilla bean pod and icing sugar to the kCook bowl
  30. Fit kCook bowl to kCook Multi
  31. Attach lid to kCook bowl with filler cap fitted
  32. Whisk with filler cap fitted - 2 min, speed 8
  33. Chill in fridge until needed
  34. Retrieve the cooled cake
  35. Transfer cake to cutting board
  36. Cut the sponge cake in half horizontally to get 2 disks
  37. Transfer one sponge to serving plate
  38. Spread a layer of mango compote on top of the sponge
  39. Add the second layer of sponge on top
  40. Transfer content of kCook bowl to piping bag
  41. Pipe some of the cream onto sponge
  42. Pipe the remaining cream on the side where the two layers of sponge meet
  43. Decorate with the reserved mango cubes
  44. Serve
