A fruity and beautiful cake that is perfect for entertaining, look no further than this delightful Grapefruit Yoghurt Cake. It's best to skewer holes and pour the drizzle onto the cake while its still hot in the tin. The drizzle can be made while the cake is baking.

Step preview

  1. Pre-heat oven - 170°C
  2. Line a clean loaf pan with parchment paper then set aside
  3. Sift plain flour into a clean large glass bowl
  4. Add baking powder, bicarbonate of soda and salt to the dry ingredients
  5. Set aside
  6. Fit midi blade to kCook bowl
  7. Add caster sugar, greek yogurt, fresh thyme, egg, grapefruit, grapefruit juice, vanilla extract and coconut oil to the kCook bowl
  8. Fit kCook bowl to kCook Multi
  9. Transfer dry ingredients to kCook bowl
  10. Attach lid to kCook bowl with filler cap fitted
  11. Mix with filler cap fitted - 30 sec, speed 7
  12. Transfer content of kCook bowl to loaf pan
  13. Bake until skewer tests clean - 1 hr, 170°C
  14. Remove from oven
  15. Skewer then set aside
  16. Clean kCook bowl
  17. Fit stir tool to kCook bowl
  18. Add granulated sugar, grapefruit and fresh thyme to the kCook bowl
  19. Fit kCook bowl to kCook Multi
  20. Attach lid to kCook bowl with filler cap fitted
  21. Mix with filler cap fitted - 20 sec, speed 7
  22. Spoon content of kCook bowl into loaf pan
  23. Sprinkle with fresh thyme
  24. Let cool
  25. Turn out content of loaf pan onto serving plate
  26. Serve
