Soft, fluffy, subtle buttery, and only slightly sweet mini brioche buns. The recipe makes either 24 mini buns or 12 burger buns. They are the perfect buns to serve as an afternoon tea or a party snack. Serve them with any filling of your choice. Why not try them with pesto and tomato slices, or smoked salmon with cream cheese

Step preview

  1. Grease and line 2 clean baking tray with parchment paper
  2. Add milk and dried yeast to a clean jug
  3. Mix until combined
  4. Let rest - 5 min
  5. Attach Whisk
  6. Add butter, caster sugar and salt to the EasyWarm Bowl
  7. Mix with splashguard fitted until combined - 3 min, Speed 3
  8. Add egg to the EasyWarm Bowl while machine is running
  9. Mix with splashguard fitted - 1 min, Speed 1
  10. Remove the Whisk
  11. Attach Dough Tool
  12. Add bread flour to the EasyWarm Bowl
  13. Mix with splashguard fitted until combined - 1 min, Speed Min
  14. Pour content of jug into EasyWarm Bowl while machine is running
  15. Mix with splashguard fitted then scrape bowl - 10 min, Speed 1
  16. Remove the Dough Tool
  17. Prove with splashguard fitted - 1 hr, 2
  18. Transfer dough to work surface
  19. Divide into pieces
  20. Take one piece
  21. Roll into a ball
  22. Repeat the same with the remaining dough
  23. Transfer dough balls to 2 baking tray
  24. Cover with a damp tea towel
  25. Prove until doubled - 1 hr
  26. Pre-heat oven - 180°C
  27. Retrieve the dough balls
  28. Brush with egg
  29. Sprinkle with sesame seeds
  30. Bake until golden brown - 20 min, 180°C
  31. Remove from oven
  32. Let cool slightly
  33. Serve
