A delicious and easy to make apple loaf cake which has the addition of a crisp crumble topping and is a great way to use up apples that are past their best. Wholemeal flour is used to give this cake a nutty flavour, but you could substitute for plain if you don't have it, also the inclusion of raisins or sultanas could be swapped for another type of dried fruit roughly chopped, for example: dates, apricots, pears or cherries.

Step preview

  1. Add raisins and orange juice to a clean small bowl then set aside
  2. Soak
  3. Pre-heat oven - 160°C
  4. Grease and line a clean loaf tin (900g) with parchment paper
  5. Attach Creaming beater
  6. Add plain flour, unsalted butter, demerara sugar and salt to the Kenwood Bowl
  7. Mix with splashguard fitted until fine crumbs form - 40 sec, Speed 3
  8. Then add oats to the Kenwood Bowl
  9. Mix with splashguard fitted until combined - 10 sec, Speed 1
  10. Transfer the mixture into a clean small bowl and set aside
  11. Add wholemeal flour, baking powder, mixed spice, butter, light muscovado sugar, egg, vanilla extract and milk to the Kenwood Bowl
  12. Mix with splashguard fitted - 1 min, Speed 2
  13. Then add apple to the Kenwood Bowl
  14. Transfer raisins to Kenwood Bowl
  15. Mix with splashguard fitted until combined - 20 sec, Speed 2
  16. Transfer mixture to loaf tin (900g)
  17. Place apple on a clean cutting board
  18. Drizzle with lemon juice
  19. Transfer apples to loaf tin (900g)
  20. Sprinkle the crumble topping over the cake mixture, allowing the top of the apples to be visible
  21. Sprinkle with demerara sugar
  22. Bake until skewer tests clean - 1 hr, 160°C
  23. Remove from oven and let cool
  24. Drizzle with apricot jam
  25. Sprinkle with demerara sugar
  26. Slice
  27. Serve
