Ideal for a quick mid-week meal, sabzi comes from the Urdu word for ‘vegetables’, which are spiced with cumin, mustard, garam masala, turmeric and chilli powder and simply cooked with garlic, ginger and chilli. This recipe is best served alongside steamed white rice with a big dollop of yoghurt to cut through the heat.
