To elevate your fresh ravioli or tortellini why not try encasing fresh herbs within the pasta? This is a great way to impress your guests at dinner and adds a flavour boost to your dish, it could also be useful for using up leftover herbs that perhaps don't look quite at their best.

Step preview

  1. Fit the Dough Tool
  2. Add the ingredients into the appliance bowl, fit the splashguard
  3. Mix – 2-3 minutes, speed 1-2
  4. Remove the dough from the appliance bowl and knead by hand until smooth
  5. Wrap in plastic wrap and let rest – 15 minutes
  6. Place the dough onto a lightly floured work surface and divide into four equal pieces
  7. Take one piece and shape into a long flat disc
  8. Cover the rest with a kitchen towel to prevent drying out
  9. Attach the Pasta Roller attachment
  10. Adjust the setting to 1
  11. Sprinkle some flour between the rollers
  12. Start on speed 1
  13. Pass the dough through the rollers
  14. Fold the dough in three, rotate and repeat several times
  15. Repeat passing the dough through the rollers, adjusting the setting down each time until you reach setting 3
  16. Place the dough on a work surface and add basil leaves to the lower half of the dough
  17. Fold the top half of the dough over to encase the herbs leaves in pasta
  18. Adjust the setting to 4
  19. Start on speed 1
  20. Pass the dough through the rollers
  21. Repeat this process with the remaining pasta dough, or refrigerate until ready to use
  22. Remove the attachment from the machine
